Contrairement \u00e0 ce que son nom indique, ce n&rsquo;est pas du tout une tarte, mais une <a href=\"https:\/\/www.iletaitunefoislapatisserie.com\/search\/label\/brioche\" target=\"_blank\" rel=\"noopener noreferrer\">brioche<\/a> recouverte de sucre. Versez la levure dans un r\u00e9cipient. Ajoutez le lait ti\u00e8de (pas chaud, max 45\u00b0C). Laissez la levure se diluer pendant 15 minutes.<\/p>\n<p><span class=\"instruction\">2. Placez la farine, le sucre et le sel dans la cuve de votre robot, en disposant <b>le sucre d&rsquo;un c\u00f4t\u00e9 et le sel de l&rsquo;autre<\/b>. Creusez un puits au centre et versez la levure dans le puits.<\/span><\/p>\n<p><span class=\"instruction\">3. Ajoutez les oeufs.<\/span><\/p>\n<p><span class=\"instruction\">4. P\u00e9trissez la p\u00e2te avec le crochet du robot.<\/p>\n<p><\/span><br \/>Quand la p\u00e2te commence \u00e0 s&rsquo;amalgamer, a<span class=\"instruction\">joutez le beurre petit \u00e0 petit. Il vous faudra environ 5 minutes pour incorporer tout le beurre. Laissez tourner le robot pendant encore 10 minutes environ, jusqu&rsquo;\u00e0 ce que la p\u00e2te <b>se d\u00e9tache des parois de la cuve<\/b>.<\/p>\n<p>Si vous n&rsquo;avez pas de robot et que vous p\u00e9trissez<b> \u00e0 la main<\/b>, il faut p\u00e9trir jusqu&rsquo;\u00e0 ce que la p\u00e2te se d\u00e9colle facilement des doigts.<\/p>\n<p>5. Laissez reposer la p\u00e2te pendant 2 heures, dans un<b> endroit chaud<\/b>. L&rsquo;id\u00e9al \u00e9tant \u00e0 28 \u00b0C, sans jamais d\u00e9passer les 29\u00b0C pour ne pas faire fondre le beurre. Sortez la p\u00e2te de la cuve et \u00e9crasez-la avec vos mains sur le plan de travail afin de la d\u00e9gazer.<\/span><\/p>\n<p><span class=\"instruction\">7. Reformez une boule et \u00e9talez-la sur un plan de travail farin\u00e9. \u00c9talez sur une \u00e9paisseur d&rsquo;un gros centim\u00e8tre. Mon disque mesurait 28 cm de diam\u00e8tre, pour info.<\/span><\/p>\n<p><span class=\"instruction\">8. Disposez-la sur une plaque recouverte d&rsquo;un <a href=\"https:\/\/amzn.to\/3cu32WQ\" rel=\"nofollow noopener noreferrer\" target=\"_blank\">silpat<\/a> ou de papier cuisson.<\/p>\n<p>Afin d&rsquo;obtenir une forme ronde parfaite, je me suis servie d&rsquo;un <span class=\"lienamazon\"><a href=\"https:\/\/bit.ly\/2yrsGg8\" rel=\"nofollow noopener noreferrer\" target=\"_blank\">cercle \u00e0 tarte extensible<\/a><\/span>, r\u00e9gl\u00e9 sur 28 cm. Laissez pousser 1 heure \u00e0 temp\u00e9rature ambiante (ou pr\u00e8s d&rsquo;un chauffage s&rsquo;il ne fait pas chaud chez vous).<\/span><\/p>\n<p><span class=\"instruction\"><\/span><br \/><span class=\"instruction\"><br \/><\/span><\/p>\n<h3 style=\"text-align: left\"><span class=\"instruction\">Garniture<\/span><\/h3>\n<p><span class=\"instruction\"><br \/><\/span><br \/><span class=\"instruction\">1. En attendant, pr\u00e9parez la <b>garniture<\/b>. Pour cela, fouettez ensemble l&rsquo;oeuf et la cr\u00e8me. R\u00e9servez au frigo le temps que la brioche finisse de pousser.<\/span><br \/><span class=\"instruction\"><br \/><\/span><br \/><span class=\"instruction\">2. Pr\u00e9chauffez le four \u00e0 190\u00b0C.<\/span><\/p>\n<p><span class=\"instruction\">Quand la brioche est pr\u00eate, creusez un maximum de <b>trous <\/b>dessus avec vos doigts. Avec un pinceau de cuisine, badigeonnez l&rsquo;ensemble de la brioche avec la cr\u00e8me. Remplissez ensuite les trous \u00e0 l&rsquo;aide d&rsquo;une <b>petite cuill\u00e8re<\/b>.<\/span><br \/><span class=\"instruction\"><br \/><\/span><br \/><span class=\"instruction\">4. Saupoudrez ensuite de <b>cassonade <\/b>et disposez des <b>morceaux de beurre<\/b> un peu partout.<\/span><br \/><span class=\"instruction\"><br \/><\/span><br \/><span class=\"instruction\">5. Enfournez 25 minutes \u00e0 190\u00b0C.<\/span><br \/><span class=\"instruction\"><br \/><\/span><br \/><span class=\"instruction\">Pour la cuisson, j&rsquo;utilise la plupart du temps une <a href=\"https:\/\/amzn.to\/2XNpQg3\" rel=\"nofollow noopener noreferrer\" target=\"_blank\">plaque perfor\u00e9e<\/a>.
