Fouettez ensemble le jaune d&rsquo;oeuf et le sucre en poudre, jusqu&rsquo;\u00e0 ce que le m\u00e9lange blanchisse.<\/p>\n<p>2. Ajoutez la farine et l&rsquo;extrait de vanille liquide. Placez le sucre, l&rsquo;eau et le glucose dans une casserole. Faites chauffer \u00e0 140\u00b0C environ. L&rsquo;important c&rsquo;est d&rsquo;arr\u00eater la cuisson <b>juste avant que le sucre caram\u00e9lise<\/b>. Il doit rester transparent.<\/p>\n<p>2. Versez le sucre cuit sur une plaque recouverte de papier cuisson. Ajoutez le sucre en poudre et fouettez <b>quelques secondes<\/b>, juste le temps de l&rsquo;incorporer.<\/p>\n<p>4.
