Originaire de Nice, cette sp\u00e9cialit\u00e9 \u00e0 base de farine de pois chiche est le snack id\u00e9al : riche en <a href=\"https:\/\/cuisine-saine.fr\/vie-saine\/articles-sante\/vegetaux-proteines-vegetales\/\">prot\u00e9ines v\u00e9g\u00e9tales<\/a>, naturellement <strong><a href=\"https:\/\/cuisine-saine.fr\/toutes-les-recettes-sans-gluten-ni-lait\/\">sans gluten ni lactose<\/a><\/strong>, et terriblement gourmande. Ajoutez 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive dans la p\u00e2te. M\u00e9langez jusqu\u2019\u00e0 obtenir une texture fluide, proche d\u2019une p\u00e2te \u00e0 cr\u00eapes.<\/li>\n<li><strong>Le repos (crucial) :<\/strong> Laissez reposer la p\u00e2te au moins 1 heure \u00e0 temp\u00e9rature ambiante (2 heures c\u2019est encore mieux). Retirez \u00e0 l\u2019aide d\u2019une cuill\u00e8re l\u2019\u00e9ventuelle petite mousse qui s\u2019est form\u00e9e en surface.<\/li>\n<li><strong>Le pr\u00e9chauffage :<\/strong> R\u00e9glez votre four sur la position **Grill (broil)** \u00e0 la temp\u00e9rature maximale (250\u00b0C ou plus). Placez votre plaque de cuisson (ou un moule \u00e0 pizza en m\u00e9tal) vide tout en haut du four pour qu\u2019elle devienne br\u00fblante.<\/li>\n<li><strong>La cuisson :<\/strong> Sortez la plaque br\u00fblante, versez-y les 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive restantes et \u00e9talez-les rapidement. Versez la p\u00e2te sur une \u00e9paisseur de 2 \u00e0 3 mm maximum.<\/li>\n<li>Enfournez imm\u00e9diatement au plus pr\u00e8s du grill. Laissez cuire 5 \u00e0 8 minutes. La Socca doit cloquer et pr\u00e9senter des taches brunes (presque noires) en surface.<\/li>\n<li><strong>Le service :<\/strong> Sortez du four, coupez des morceaux irr\u00e9guliers \u00e0 l\u2019aide d\u2019une spatule, poivrez g\u00e9n\u00e9reusement et servez imm\u00e9diatement.<\/li>\n<\/ol>\n<h3 class=\"conseil\">Le conseil de Karen<\/h3>\n<div class=\"conkar\">\n<p>La Socca n\u2019attend pas ! Elle doit \u00eatre consomm\u00e9e d\u00e8s la sortie du four pour garder son croustillant. Si vous n\u2019avez pas de plaque circulaire, une l\u00e8chefrite de four classique convient tr\u00e8s bien. Pour une version plus moderne, vous pouvez parsemer un peu de romarin frais sur la p\u00e2te juste avant d\u2019enfourner. La farine de pois chiche s\u2019hydrate, la saveur s\u2019adoucit et la texture devient plus r\u00e9guli\u00e8re.<\/li>\n<li><strong>Mousse retir\u00e9e :<\/strong> apr\u00e8s repos, retirez la petite mousse en surface : la cuisson sera plus nette et la socca cloquera mieux.<\/li>\n<li><strong>Plaque br\u00fblante :<\/strong> c\u2019est le secret n\u00b01.
